Avacados and Beets
First off, avocados are fruits, not veggies. Who knew?!
Acavados are full of fats that make your body healthy.
They contain mono-unsaturated fats which help reduce bad cholesterol levels and lower your risk of heart disease and stroke.
I've had a pretty big crush on these green beauties of late.
I love smooshing up an avacado and putting it on top of a turkey burger, spreading it on an english muffin (with a little bit of sea salt on top) or mixing it up in wild/brown rice and black beans.
Something I have yet to try but am pretty darn curious about are these Fudgy Avacado Brownies.
Let's be honest - who really loves beets?!
So totally not me!
However, beets are apparently really great for you in a lot of different way.
The one thing I found over and over again is the amount of vitamins, nutrients and fiber that beets provide. Vitamin C, magnesium, folate, potassium...and more!
The way I've best been able to stomach this veggie is in a juice blend. But I know there are many more benefits to be gained by eating them rather than juicing them.
If you're a beet fanatic I would love to hear about some of your favorite recipes!
